Ba Xian Sha Ren (八仙沙仁) is a hand picked Dan Cong (单枞 - Single Bush) Oolong from a 60 year old tea tree on the slopes of Phoenix Mountain (凤凰山 - Feng Huang Shan) in China's Guangdong Province.
Ba Xian (八仙) means "8 Immortals" and is named after the group of immortals that are said to live on islands in the Bohai Sea that are revered by Daoists.
The tea leaves picked by hand and then left to wither in the sun, before further withering indoors. They are partially fermented in a large pile overnight and then follows a process of firing to increased temperatures (180°C degrees and 230°C) and rolling (which releases essential oils) which give the tea it's "Dancong taste"
This tea has a unique fresh profile with hints of nuts and honey with a floral fragrance. The taste is mellow with a long lasting sweetness.
