Sencha (煎茶) is one of the most popular teas in Japan and is important in Senchado (煎茶道) or the "Way of Sencha". The Sencha production process differs from Chinese Green Teas, as the tea leaves are steamed for between 15–20 seconds to prevent oxidization and are then rolled, shaped, and dried, where Chinese Green Teas are pan fried.
